BLOOD ORANGE BANANA BREAD

VEGAN BLOOD ORANGE BANANA BREAD

200g vegetable oil

130ml soy milk

100ml blood orange juice

zest of 3 blood oranges

230g sugar

420g flour

7g baking powder

3 mashed bananas (medium size)

1 blood orange

50g icing sugar




  • Preheat the oven at 180c for convection 170 for fan

  • Mix together the oil, sugar, milk, blood orange juice, zest and mashed bananas

  • Add the flour and baking powder

  • Combine all and pour into a 2lb lined loaf tin

  • Bake for 60mn or until a knife comes out clean

  • Let it cool down

  • Cut the blood orange in half and make slices with one half

  • Combine the icing sugar with the juice of the remaining half

  • Pour the icing on the cake and top with orange slices
